mounting it to plexi wouldn't be a problem because it doesn't conduct electricity, but I don't have a clue how the XBOX motherboard is mounted. I would just use some motherboard standoffs.

 
Can't speak for the Xbox, but in building PC's it's better to ground the board through the standoffs
in addition to the ATX connector, but it's not required.

One rule of thumb is, the better grounding you have, the less EMI you will have. Maybe why many
avid overclockers insist on all metal standoffs.
 
You can use the brass standoffs no problem, and if you have a # 6 tap, you can even drill & tap the holes. :)
 
no problem mounting the motherboard on plexi with brass standoffs, the PSU grounding is sufficient for the EMI unless the right is sitting next to a CRT or something like that =]

shouldnt be a bending problem as long as the standoffs are all of the same length. also, if you insist, you can ground each of the standoffs back to the PSU enclosure but there is honestly no reason as the ATX cable does this...

You should be more specific .... the PC case threads we are talking here are '6-32' (= 32 threads per inch).
Don't want someone to grab a '6-40' tap by mistake do we?

And BTW ........ the proper drill size for the '6-32' thread is #36 (= 0.1065")

I used Wellnuts on my project Colossus naked mod.They're cheap, work great and are usually found in your local hardware store or Home Depot or whatever. The Wellnuts rubber construction allow a little 'give' while still providing a very strong connection. It also insulates vibration issues. Added plus is that they are more forgiving of holes that are not drilled right to the millimeter.

I've never tried, but I would be a little anxious of threading the lexan or plexi... I would think that it's too brittle.

EDIT -

fwiw I didn't even use standoffs... The upper lip of the wellnut is about 3/32 which is enough to hold the boards off the surface. With lexan or plexi, there is no concern of the bottom of the board touching anything conductive.

btw, most types of generic super glue won't bond with acrylics. There are special products for that, but I'd highly recommend a mechanical fastener.

In 4th pic notice how it is mounted. I did not even use standard mounts, I used screws and nuts from Home Depot. The board is held off the plexi by 5 thin plastic washers.
 
I do, but you won't be able to see much more detail. My camera is a piece of crap...

It is a crappy pic, but it gives you an idea. Here is how it went incase you can't see it:

Nut
Motherboard
Plastic Washer (avoid shorting if washers get displaced)
Plastic Washer
Plastic Washer
Plexi
Metal Washer (hold screw in hole properly)
Screw head

I got all the screws, nuts, and washers at Home Depot, along with the plexi. I think I spent around $15 on the "case"... The on switch is on the front panel, just to the side of the fan over the PSU. I just drilled all the holes where they needed to be for the PSU, laptop HDD, and Mobo, then mounted like I said above. The PSU was mounted about a cm higher because it needed to hide cables and overlap the HDD adapter a bit. My friend Austin said you could not boot off a laptop hard drive. This is entirely not true. The entire build actually was based on disproving things he had said
