If this is the type of cable that I think it is, the connectors are even really thin (like ethernet cable thickness thin). But I would double-check that it is the right wire before you do it. Otherwise, just run some cat6a and then terminate it for up to 10Gb goodness. :D

Generally most switches can do line wire speeds without breaking a sweat. Gone are the days of cut through switches or problems in speed with the store and forward design. There's no real benchmarking done on switches any more because of this. Get whatever meets your specs and run it! :)
When something works so well, it's hard to replace--because it works so well! I tend to let stuff just keep working. Power is only one consideration as most older stuff ends up in landfills and that's a bigger waste imo.

Little late to the party, but I'd also try the -P switch on iperf and hit it will multiple parallel streams until it maxes out. I'll start with 3 and 5 but have had to use as many as 20 on an IPsec vpn tunnel to max it out. I'd be very interested in the results! Love your new setup btw. :D
