The EPYC line offers more PCI lanes I think. Aslo with slower processors, its great for web hosting servers and the like. It's not really a product offering for someone sitting in front of the monitor.

It's a personal workflow preference to have two or more displays. Given your choices at 27" I would want a minimum of 1200 pixels ... 1080p is stretching it a bit thin that those sizes.
