I have not made any changes with any settings If that matters. I have never had this much ram in any system I have worked with so this is all new to me.

In reality I have gotten better about that, the first week Skyrim and I were inseparable. With time and completion of the main quest line I have returned to a more reasonable amount of time spent gaming.
Yes, and more yes. I was introduced to The Elder Scrolls games though Oblivion as well. I have since played many TES, Skyrim is by far better than Oblivion in my opinion and I would and, have been recommending it to anyone with any interest in the series.

Maybe if it were on rails it could work with enemies around. Its not like a dragon couldn't get in and out of a battle while taking care of it's self.

That would work now. When I did this my armor level was really low and I would be willing to bet I would have been launched in one hit. Sad part is I couldn't AFK the mudcrab. I had to heal every so often. I went from heavy armor level 25 ish to 70.
I found a mudcrab, it was a long battle. In game time it lasted all day and into the night, some time in the early morning I had finally stared that mudcrab to death. I more than doubled my heavy armor and block skills.
I know your problem... I too have had 75+ pounds of ingredients on me at one time or another. I have to tell myself not to pick flowers and catch butterfly's. I some how end up with at least 30 pounds of junk that I can never remember where or when I picked it up.

I would start with a helmet, may not be a ton of armor but it all helps. The amulet will help, dunno if it is worth it though. Might also try a shield and using only one weapon, the ability to block may prove more useful than the second weapon in some cases.
