This was my initial plan. My question was more of a question of best performance. My initial setup is basically as you described. USB with ESXi, 750GBs as datastores. And honestly, no I don't currently need more than 8TB, but if I could setup those other disks in mirrors and maximize iops...
Granted, this would be WAY more storage than I'd need, but if I took this route and put the two mirrors into a single pool, would performance be decent is handed back to ESXi as a datastore to run maybe a 10 or so low I/O VMs?
Then I could have those drives as the datastore for all the VMs...
