If your monitor has both DVI and HDMI available you are fine using DVI<>DVI cable. If your only choice is VGA (blue plug) or HDMI on the monitor side then you would be better off using the DVI<>HDMI cable.

You will need to use LVM to do it.
Do NOT put your OS on the RAID5. That's only asking for trouble. Use a cheap 80GB drive for the OS.
There are plenty of guides online for expanding the RAID5 using LVM.
