They forgot the letter designation "B" after NCC-1701. It appears they've made gingerbread model of a retrofitted Constellation class.

The Enterprise B was an Excelsior class. This appears to be the original Enterprise as seen in the first three motion pictures.

No need for a "B" designation. Just NCC-1701 is correct. As you noted, it's the retrofitted Constitution, as opposed to the Excelsior class Enterprise NCC-1701-B.

I hope after they ate some of it, we get to see the USS Reliant or the ship falling towards a planet. :D
 
Make ST-1701 out of fruit cake so it lasts a lot longer. :D
