They forgot the letter designation "B" after NCC-1701. It appears they've made gingerbread model of a retrofitted Constellation class.
That's pretty damn impressive! *hats off*
The Enterprise B was an Excelsior class. This appears to be the original Enterprise as seen in the first three motion pictures.
Pretty neat. Now there's gingerbread Enterprise vs Gingerbread Smaug.
No need for a "B" designation. Just NCC-1701 is correct. As you noted, it's the retrofitted Constitution, as opposed to the Excelsior class Enterprise NCC-1701-B.
This is the first time I get to be a Star Trek pedant on the internets.
I hope after they ate some of it, we get to see the USS Reliant or the ship falling towards a planet.
