In my case, I'm a full-time student so I don't have enough money to pay for a data plan but I still want one device that acts as a phone/PDA. Since I'm on campus a lot, I can just use the free Wi-Fi.
Why not use the Touch? There are many VOIP applications for iPhone/iTouch that work over Wi-Fi (Skype being the most popular). Then get a simple cell phone for whenever you dont' have Wi-Fi?
I think your choice depends where you spend most of your time and how you use your phone. I have the iPhone and like others said, I love the data plan. Being get news, movie times, ect. while on the go is how I use my phone the most. However, this may be a feature you'll have to sacrafice in order to be able to do what you want, as it seems you're more interested in the 'PDA' features of the iPhone/Touch, sycing calendars, contacts, ect.
