6800GT as it has 16 pipelines. Some X800 Pros can be modded for 16 pipelines, but you have to do a hardware mod and flash the bios which can be risky if you're inexpierenced.. Go with the 6800GT as your chances of finding a cheap X800 that's in stock and will mod aren't very good.
If the RAM doesn't work out try some OCZ EB, although I can't remember if there is a PC4000 variant of it yet, but the PC3700 is out for sure and it overclocks very nicely. Hope you can build this sys and get it to run in a 1:1 ratio :)

If memory serves me right, AMD stated they won't be switching the A64 over to DDR2 at all, to keep prices down and some other reasons. Also, why would you even consider DDR2 for the A64 there's absolutely no need to run 667mhz DDR2 ram in an A64 based computer as no A64 sys will reach that...
