Is there much difference between the UD3H, UD4H and UD5H apart from colours? I can't seem to see any difference in the specs on their website.

If your mobo supports it then it's a great choice since you're not overclocking and you don't need onboard graphics (I'm assuming you have a dedicated GPU since you mentioned gaming). In your situation it's basically an i7 3770 but much cheaper.
Which P8Z77? There's several variants with different suffixes, but as far as I can tell they all only have 2 PCI-E slots so you wouldn't be able to use those 3 cards.

This is actually the best answer. The Xeon won't have overclocking or integrated graphics but you don't need those anyway. It's much cheaper than a 3770K and only slightly more expensive than a 3570K but has Hyperthreading which will be useful for what you're doing.

For thin laptops it's the MBA, tried out a lot of ultrabooks but the key travel is terrible in most of them and uncomfortable after long periods.
