If your mobo supports it then it's a great choice since you're not overclocking and you don't need onboard graphics (I'm assuming you have a dedicated GPU since you mentioned gaming). In your situation it's basically an i7 3770 but much cheaper.
Which P8Z77? There's several variants with different suffixes, but as far as I can tell they all only have 2 PCI-E slots so you wouldn't be able to use those 3 cards.

This is actually the best answer. The Xeon won't have overclocking or integrated graphics but you don't need those anyway. It's much cheaper than a 3770K and only slightly more expensive than a 3570K but has Hyperthreading which will be useful for what you're doing.

I haven't used anything better than those Scythe AP-15's, they are really quiet for the amount of air they move. At the full 1850 rpm they are a bit loud so if you don't have a fan controller it might be a better idea to get the 1450 rpm version instead.

I reckon one of those overclockable Korean monitors (Overlord/Catleap) would suit your usage: the high refresh rate is great for gaming, it's an IPS panel so the colour reproduction would be good for your PS usage...
That's an absolutely tiny difference, in general the choice of motherboard has minimal impact on gaming performance (when running a single GPU).
What you really need to look at is the features and form factor of the motherboards.
Problem is 7970's aren't exactly cheap or good value, unless you find a good used deal. If you want to buy new then 7950's might be a better option as they are significantly cheaper and not that much slower when overclocked. Still, I'd wait for AMD's next generation cards which are due out early...

You're not running any VMs so won't get anywhere near 16GB. Photoshop, FF and a game all open at the same time don't take up 16GB. Just go with 2x8GB now and if you ever need more in the future then get another 2x8GB kit.
