Little bit of necro here - but just ran into this on a client's 2003 x64 server (also Poweredge, 1950 in this case).

If you're getting HTTP 500, I'd run through the steps from Method 2 of the MS KB article I posted. That's done the trick for me every time so far. Should only take a few minutes to get set up with little interuption.
Quickest way I've gotten around this is by running cmd as administrator, then mapping the "invalid" drive to *something* temporarily. I've only had any problems on Vista/7 redirecting any of the user folders to a mapped drive a few times, but mapping that drive as the local administrator...
So far what I've seen when having issues with ActiveSync on Exchange 2003, RPC over HTTPS is not set up, or having forms-based auth enabled on Exchange's directory. SBS 2003 has this set up out of the box, but not standalone Exchange 2003.
