I think you should definitely get the Sandy. If you overclock it, you're already getting more performance than you're gonna get out of an Ivy at Stock at the very least, so you're pretty future-proofed for maybe a few years. Maybe get a mobo with PCI-Exp 3.0, but I suspect it'll be a while...

I use Sennheiser CX-680s, and they're both awesome, and versatile. You can abuse them, even submerge them, and they don't fall out of your ears. Oh, and the sound quality is amazing, but it's Sennheiser, so duh.

Basically, BF3 really doesn't care what CPU you're running, but it DOES care about the GPU you have equipped.

I don't think it matters. Some might remove the old drivers just to be on the "safe" side, but it's not windows 98. Just disable/re-prioritize the graphics in the BIOS in favor of the dedicated board, and you should be fine.
I play all of those games you mentioned, and they run fine on my Q9550 with a 6870 @ 1920x1080. The 6950 is better, but the 6870 is cheaper, so that's your call. I think that any of the hardware you listed will meet your requirements just fine unless you decide to go eyefinity later on.
Index/middle finger balls all the way. I've used both types extensively, but I guess it just comes down to the physical construction of your hands and personal preference. Most of the folks I've converted to trackballs prefer non-thumb devices.
