Ok, well I just too it out of the case and assembled it on the table and it's still a no go. It'll power on for around 5-10 seconds, then it'll restart and stay "on" without anything really happening.
I'll try taking it out of the case tonight and see what goes from there.
At this point I'm just trying to get any sort of beep or error codes and I am getting nothing.
It will start up for a few seconds, then restart. That's all.

I placed an order at newegg for an i7-920, an asus p6t-deluxe-v2 and 12GB of OCZ Ram.

Yeah, I made sure it was seated and everything. The fans on the video card spin up and the lights power on when I turn on the power, so its not that.

I swapped out heastinks earlier today, and this required removing the motherboard and then putting everything back together.
When it comes time to power on the system with the new heatsink, it starts up for 5 seconds, turns off, then starts up again. I can hear the hard drives...

I'd go with either SAS or SCSI Drives. Now, if you want 1TB of storage you are going to be paying a pretty penny if you use SAS or SCSI drives. Probably around 1800-2200 for 6 300GB drives.

We resell ESET as well, and its pretty slick and also allows remote administration of the clients.

Sure, building a unit is nice and inexpensive. But what happens when a component fails? Sometimes the warranties and the peace of mind is worth the extra money, at least for businesses.
