Can I plug that into the 8-pin power connector and leave the other 4-pins unplugged?

I found those 2, Gigabyte h55m-usb3 and Gigabyte h57m-usb3. What are the differences between those two and which do you recommend?

Some H57 boards have also onboard graphics support (ex: Gigabyte H57M-USB3) - Yes I understand that I'd need to buy a GPU if I upgrade to a i7.
