How would I be able to connect JUST my notebook and server which are both in the same room, together to get greater transfer rates while doing file transfers?

If you want no bottle necks, gigabit network cards and a crossover cable? Though most network cards now a days can use a patch cable as a crossover cable. Just fix the IPs and there you go, now just limited by your laptop hard drive.

Gbit requires auto-sensing crossover/straight cable ability. :)

Gbit
Ethernet
802.11n
802.11g

basically in that order for speed iirc. My laptop has .11n, but the router doesnt. If I need to do a good size transfer it makes a HUGE different if I plug in (10MB/s vs 2MB/s)

just go grab and ethernet crossover cable there is no point in wireless because....well im just taking a gander here but i doubt your server has wifi....even if you only have 100mbit nics it will prob be faster than wifi just cause wifi is shared and has more chances of screwing up.....so yea get a crossover cable and be done.

Would I just plug each end into the ports on my desktop and my notebook? Or would I need an NIC card?
