Mortal Kombat (who can forget, not to mention the movies with another 4-5 CD's)

I was playing Need For Speed: Prostreet... man, thats a wicked good soundtrack (and done well into the game FWIW).

So what are some of the other games you have been like 'dang, can I download that somewhere?'

Tony Hawks Pro Skater 3 had one of the best soundtracks to any game to date. LOVED it....all the TH games were good, but this one stands out!!!

NFS: Underground (1) was also very good as well.

GTA: Vice City had a great soundtrack
The other GTA games were okay soundtracks too.
Hmm... and I suppose if you include Rock Band, Guitar Hero, and the like, you get good soundtracks there.

I don't know... but I really like songs in Icewind Dale & Icewind Dale 2

Baldur's Gate Series. Seriously amazing music. They don't make games like that anymore. :(

StarCraft
Diablo II
Chrono Trigger
Icewind Dale
THPS 2

... are all up there in my books!

Starcraft, Halo, BioShock, Vice City and Lumines (first one) are the standouts for me.

Let's see...

Fallout: Mark Morgan
Descent 2: Various Artists
Portal: Kelly Baily
Doom (PSX): Aubrey Hodges
Planescape Torment: Mark Morgan
Quake: Trent Reznor
Quake 2: Sonic Mayhem
Mechwarrior 2: Jeehun Hwang
Thief Deadly Shadows: Eric Brosius
BioShock: Garry Schyman

All original soundtracks here. Not just amalgamations of other works (how boring).

Crono Trigger
Megaman (pretty much any game from the original or X series)
C&C Red Alert 1 and 2
Unreal Tournament
Metroid Prime
Sonic 1-3

Those are the main ones that I can think of right away. Most game soundtracks don't stick with me, but the ones that do are really fantastic.

Super metroid and FF7. Best soundtrack ever though is the non-edited orignal version of MK the movie.

In rough order:

Chrono Trigger
Halo 3
Halo: Combat Evolved
Final Fantasy VII
Final Fantasy IV
Halo 2
The Legend of Zelda: A Link to the Past
Final Fantasy VI

Myst 3 and 4-Jack Wall is absolutely incredible
Silent Hill-Parts of it always reminded me of Portishead
Onimusha

Team Fortress 2 and Call of Duty 4 has some pretty good soundtracks. Warcraft 2 had an awesome soundtrack too.

R-Type Final
Gradius V
Azel: Panzer Dragoon Saga
Panzer Dragoon Orta
All the Hitman games
Einhander
Ace Combat 6
NiGHTS into Dreams
Radiant Silvergun
Jet Set Radio and JSR Future
Guilty Gear XX
Guilty Gear XX: Reload Korean Version
Trusty Bell
Ridge Racers
Halo
Ico
Shadow of the Colossus
Morrowind
Unreal Tournament
Burnout 3 Takedown
Psyvariar 2
Rez
Streets of Rage 1 and 2
Soulstar
Sol Feace
Thunderforce 4
Xenogears
Armoured Core For Answer
Broken Thunder (OST for the unreleased Thunderforce 6 game)
Turrican 1 and 2

All great in my opinion

My favorite soundtrack is actually from an NES game called Rygar. Simply awesome.

Homeworld
MW2
and the original Command and Conquer

but those are actual ones you can play..

if you mean just game sound track then Lucas arts games like Day of the Tentacle and Curse of Monkey Island.

Ah...I forgot about Chris Vrenna's work on American McGee's Alice. A great soundtrack to a so-so game (available on Amazon MP3 as well).

I thought Portal had an amazing soundtrack, but that's because I actually listen to electronic music anyway.

Wow no mention of Jeremy Soule? His soundtracks are always awesome. Just off the top of my head:

Oblivion
Guild Wars
Supreme Commander
Warhammer 40k Dawn of War

Outside of those I've got Crysis and Sins of a Solar Empire soundtracks playing in iTunes right now. Oh and of course the Metal Gear series always has an impressive soundtrack (MGS2 is my favorite).

Star Control 2
Last Ninja (C64 version)
Pretty much any Psygnosis game on the Amiga (Shadow of the Beast series, etc.)
Pretty much any Factor 5 game on the Amiga (Turrican series, etc.)
Megaman
Megaman 3
Megaman X
Gaiares
ActRaiser
Secret of Evermore
Legendary Axe
Castlevania series
Ocarina of Time
Splatter House
