Anyone got a good setup guide for a noob who wants to go ZFS for a file server?

I dont know linux, and I dont want FreeNAS, it wont use 8gb of ram.
 
Try reading up on Napp-it - it's pretty darn easy to install openIndiana + napp-it in only a few commands and then manage it from a web interface.
 
^^ I second this.

FreeNAS wasn't too bad (but wasn't overly user-friendly back when I used it) to get set up and working, but it was slow in my experience.

OpenIndiana + Napp-it is very easy to set up and manage. Performance is great for the hardware I'm using so far.
