X99 Upgrade Options?

Hi everyone, This is part advice pandering, and part self reassurance, please bear with me as the 'Order Now' button sings like a Siren.

I find myself fighting off the upgrade bug... I have it bad. I am still running an i7 920 on an X58 Rampage II Extreme, and that has served me well over the years but is starting to feel it's age next to all the shiny things I'm seeing.

A few years ago I added a couple 180GB intel SSDs in RAID0 to compensate for its lack of SATA3 and that got me by for a while. I just added 12GB RAM to make my total 18GB, and that held off the craving for a bit... but I feel like it's time to replace the whole thing. The 920 has been great, but newer features keep piling up outside of it (SATA3, USB3.x, M.2, NVME, PCIe3.0, Quad-channel DDR4, etc)

I know that the general "give me advice" threads typically ask for a specified, or main use... but I plan on using it for everything. I prefer to overbuild and have a machine that will do anything, and do it well. Gaming, Video/Photo editing/encoding, web design. My interests run the gamut and I need my main computer to tackle anything I throw at it.

Budget isn't too much of a factor, but I do like to hover a click or two over the sweet spot. Here is what I am looking at for main components:

MOBO: ASUS ROG RAMPAGE V EXTREME/U3.1
CPU: Intel Core i7-5930K (????)****
RAM: G.SKILL TridentZ 32GB (4 x 8GB) DDR4 3200
SSD: SAMSUNG 950 PRO M.2 512GB
CASE: Phanteks Enthoo Primo PH-ES813P_WT

Total on these come to around $1850 after combo deals and sales. I would re-use (for now) my:

GPU: Sapphire 7970 6GB (waiting for Pascal)
PSU: Corsair TX850
CLC: Cooler Master Seidon 120XL

****Aside from the obligatory "should I do this now or wait for the next gen" question, I wonder if anyone has any productive insight on the CPU. I just recently learned about the Xeon E5-1650v3. It's been a while since I've really dug into chip tech, but from what I understand, this is the same chip as the i7 5930k... it's even unlocked! Unless I'm missing something, wouldn't this be the better chip to use (it's around the same price-point)? I'm just wondering about features I could tap into down the road like higher RAM capacity and ECC. Even if I never use any of those, they are essentially free, and at least have the 'option'.

Is there some other difference I am not seeing between those CPUs?

I am ready to order now. I'd just like to be absolutely sure of each piece before committing... I'd love for this one to last as long as the last.

I would reccomend you go with the MSI x99S XPower AC motherboard. Way better/stable than the Asus X99 boards.

+1 for MSI mobos. Although i was a fan of ASUS ROG motherboards, their maximus viii series seemed cheaply made compared to msi. Not that they're not good, but i think msi is better.

As for the cpu, why not get the 5820k instead and go for a better gpu?
