I currently have an aquacomputer setup using the 8mm plug and cool pipework a 2 fan radiator (120mm fans), and an eheim 1048 pump, cooling a 2700xp, and northbridge, and it works really well

I'll be upgrading shortly to the following:
FX55
2 x MSI 6800 Ultra Cards

will my pump (eheim 1048) be upto the task of moving the water around fast enough

Wells some say yes and some say no ;) But in your case I would say yes as the 1048 is a decent pump and it would be dependent on how much OC you are doing. Keep in mind that those 6800 Ultra's pump out a lot of heat. So try it and if it doesn't work well you can always get a bigger pump or even do a two loop configuration.

Single Eheim 1048 will be fine.

Only smallish gains to be had by switching to a stronger pump. Justifiable only if you are really enthusiastic about it.
