Which Harddrive?

Both the Maxtor and the Hitachi drives that you linked to are not native SATA hard drives - but are actually PATA hard drives that have been bridged to SATA. (Both companies do make native SATA hard drives, with SATA II support - but Maxtor's version only comes in 200GB and larger, while the Hitachi T7K250 comes in a 160GB size.)
 
Of the three you listed, the Seagate is probably the best pick. The T7K250 is a worthy competitor to that drive, you should at least check it out. Hitachi's drives are faster than Seagates, but Seagate definitely has better warranty service should you require an RMA, and they give that better service for two extra years. If it's going to be your only drive, having your box out of action for more than a week while you wait on standard RMA kind of sucks, and Hitachi doesn't offer the advance repalcement that gets yoru drive and system back in action in less than a week.

The only Maxtor drive worth considering is the DM10/MLIII 16MB buffer drives, and those don't come smaller than 200GB. Hitachi makes the fastest drive you can get for under $100 in the 160GB T7K250/7K250.

What I said about those two drives in question is that they use a PATA-to-SATA bridge chip. And anything that uses a bridge chip will slow down performance somewhat.
