I currently have a 120gig and 180gig Western Digital Special Edition hard-drives. Will 2- 180gig Western Digitals in Raid be faster then 1-74gig Raptor? Thanks!!
 
There's more than 1 kind of fast.

I would expect that (with a small stripe size) the RAID 0 would beat the Raptor in sustained transfer and the Raptor would own in random access situations.
