Currently have i5 2500K, 8gigs of RAM and a XFX 5850. I game at 1920x1200. BFBC2 runs fine but as soon as there are a lot of explosions nearby the FPS drops down to a low 20fps. So even if 95% of the time the fps is at 60fps, would adding a second 5850 be helpful. They are pretty cheap now.

Would it be better to sell the card and go with a single 6950?

5xxx scaling isn't as nice as the 6xxx series. I have long debated this issue myself and figured 6950 or wait til the next generation. I am waiting for the next gen though. If you go 6950, unlock the shaders and have some fun :p

My vote would be to get a reference 6950 and unlock it, but it really depends on the other games you play and how well they'd scale in crossfire, and how much the money is a factor to you.

Are you overclocking your 5850 as well? Might get that to bump up 5-10 fps? I think you might be able to get up to 875 mhz on the core and 1250 mhz on the memory (depending on your board). As far as the upgrade you could buy a new 5850 for around $140 right now, or sell your 5850 for around 100 and get a 6950 for 230 ish (http://slickdeals.net/forums/showthread.php?sduid=0&t=2919123) so in theory you would be break even either way $ wise.

Crossfire will net you a lot in-terms of fps but there are potential issues where crossfire doesn't work so well. Just my 2c :)

Just drop your detail settings and wait for the next gen cards.
