Yes, another one of these kind of posts. :)

I'm currently running 7800GT SLI on an X2 4800. Unfortunately, I don't see much in the way of cross-generation benchmarks.

I'm thinking about going to a 3850. Am I going to see a significant improvement?

7800gt sli is slower than a 7900gtx, the x1900xt is a little faster than the 7900gtx, the 3850 is at least 30% (very conservative estimate) faster than a x1900xt, so a 3850 is easily doubles the performance of 7800gt's in sli.
