I'm planning on transfering the harddrive and operating system from my old server to a new one with different hardware. Is there a way I can transfer my share settings and everything from the old machine to the new one? Preferably without any performance hitches?

In that case, it's not a server OS, which takes the answer into a whole new direction. Sysprep will work fine in this situation, and we have a sticky with all the Sysprep-related info any one person could hope to ingest. You'll have to go through the mini-setup again, but your apps, shares, and settings will remain.
Microsoft has tool that can help you out with the 2003 server, dont know if it works with XP or not.

after re-reading I dont know if you will actually have both up at the same time, if your actually just moving just the hard drive then this will be of no help!
