I've just recently gone from a cramped case with a large clear window - to a spacious upgrade but that has a small "V' shaped tinted window.

I'm looking to cut out a large (as large as possible really) opening and use a clear acrylic window to show off a bit more of the inside.

This would be my first real case mod, so I'm really just looking for some pointers on cutting out the metal, where to get the new window and how to cut it and suggestions for attaching it to the metal, and just any other general information on how to do this.

Cutting your panel is pretty straightforward. The easiest thing to use would be a tool like a jigsaw. A Dremel-style rotary tool will work as well, although it will take longer. Cutting the window can be done the same way, although you have to make sure not to use too high of a cutting speed or you'll melt the plastic.

The best attachment method is simply to use nuts and bolts. For a large window, you should probably put fasteners at the midpoints of any long sides.
