I have purchased a maxtor 250 gig 8mb cache drive within the last few months. It came with a controller that also has sata 150 on it. Is there any advantage of converting this drive to sata besides a smaller cable?

No, if you use a PATA -> SATA bridge, it'll most likely decrease the drive's performance a little bit (probably wouldn't be noticeable at all). Although, if you worry about big IDE ribbon cables and airflow, I'd think it'd be a fair tradeoff to use the thinner SATA cable.
