Well, I've just updated my computer with a pair of nice fans in a recent thread. How do you guys recommend checking the temps? I'm currently using HWinfo64 for it, but was wondering what the best software or hardware for getting the most accurate temps?

I use the XTU benchmark.

You'd need to put your old fans back to do a comparison though.

Good luck!

In some cases the application by your motherboard manufacturer offers the most accurate software-based reporting. You should try a variety of programs and compare readings. Afterburner, AIDA, Real Temp, Core Temp, and countless others all offer temperature sensor monitoring.
