RAID Stripe size?

Depends on what you are going to be storing on that (potential crash and burn) array.

If it's large files (mp3's and movies) go for a large stripe size, like 32k or 64k. Also remember to change your cluster size when formatting it.

If it's going to be an OS drive but partitioned, 16k seems to yield nice results.

I'd do some testing and seriously consider not putting them in a RAID 0 unless you can safely back the entire array up.
