What size radiator would I need to properly cool a 2600k and a GTX 570?
I want good and quiet cooling while overclocking both.

Would a 2x120mm radiator be enough or do I need 3x120mm?

I researched the TDP of the combined parts and they are 315w (95w cpu and 219 gpu).

Remember that if you are overclocking the TDP will more than likely go up some. You can get away with a 3.120 but I would be sure its a decent rad with decent fans.
 
You can get away with a 2x120, it depends on the quality of it. If you get one with high FPI (fins per inch) and fans on both sides of the radiator, you'll probably have enough cooling power. This method requires somewhat noisier fans, as they'll need to spin faster. One example of such a radiator is the GT Stealth, thin with very high FPI requiring moderate to high speed fans, or fans in push-pull configuration. I once cooled SLI GTX 275's and an overclocked Phenom II 965 using a Thermaltake 2x120 radiator and a single 120 swiftech back when I was first getting into water cooling. I had to use two 100+ CFM fans and a 90 CFM fan to barely provide enough cooling power for the 275's and 965, all 3 running folding.

With a 3x120, you can use one with lower FPI and thus slower spinning fans, reducing noise. If you use a thicker radiator with lower FPI, you can get away with even slower spinning fans.
