If I were to take one drive out of the RAID setup and plug it into a new machine would all the files be there? I mean it just creates a duplicate of the data right?

Possibly but not necessarily. Raid 1 implementations generally work like this (although it's not recommended to do this on any sort of a regular basis or on important data - modifying half of a mirror without notifying the controller is a recipe for data loss) but some keep the metadata at the front of the disk and thus Windows won't recognize it.
