With the average gaming system do you think both of these power supplies would be able to do the trick? I say for sure on the 750w, but what about the 610 watt?

Yes as would any high quality single rail PSU with +12V@30A or more.

The PC P&C 610W is more than enough, as would the PC P&C Turbo-Cool 510W, however I too would choose the 610! ;)
 
BTW I normally keep my systems for about 2 years. The system I have now is more like 3yrs old. If I kept the silencer 610 for that long do you think that it could handle the load? The way Nvidia and ATI are going I would say no. But if they put effort into efficiency like Intel and AMD I think that I will be okay.
