I have two printers that get deployed via GPO. One has a staple function normally (but isn't available on the deployed gpo version) and the other has an external tray function to print from that isn't available.

Is this because the driver isn't 100% for the printer or is it because the deployed GPO through file and printer sharing on the windows 2008 r2 machine wont support random features like that?

Can you manage the printer features from the Server/sync functions. Does the printer have a driver assist service that needs to be installed?

The printer was installed through the print server role in server 2k8 r2 role management. The print server is doing everything right now.

What brand of printers are these? If you open the printer on the server can you see the features/configure them?

one is a konica minolta c352 and the other is a ricoh 2500

I don't see the features listed on the server either.

Are you sure that you are using the right driver? I've seen Xerox drivers that are generic to multiple models w/o higher functionality compared to specific drivers for the model in question.

Download a specific driver fresh.
