Where can I get ahold of one of these? I heard the 560J and 561 chips overclock very well.
 
TigerDirect has them in stock for $430. Google turned up a few more less noteworthy places as well.
 
I haven't seen any of the 5*1 CPU's for sale anywhere yet. You can probably find a 560J on eBay easy enough.

BTW, what does the "1" in 561 signify? i.e. What's the difference between a 560 and 561?

The 561 is 64-bit.
 
6xx series have full EM64T technology and are N0 steppings which can overclock to 4GhZ easily on air, said Chrisf6969.
 
The 5X1 series chips are simply 64-bit chips without the extra 1MB of cache.
