Hello everyone! My first post here...

I'm upgrading my gaming rig this week (cpu, mobo, graphics card, memory and PSU), and have been contemplating about if the PSU I have thought about ordering is too overkill. Here's what it will be powering:

Intel i5 2500k (will be OC'd as far as I can get it)
Geforce GTX 560Ti 448 core (will be OC'd as far as I can get it)
Asrock Z77 Pro3
2 x 4GB DDR1333
Transferred from current rig:
6 x Good old SATA drives (3.5")
1 x DVD-RW drive
1 x Sound Blaster X-Fi Fatal1ty Professional
1 x DVB-C PCI card

I thought about putting my a 2-3 year old Enermax Modu82 425W in a retirement home (read: closet) and replace it with a Corsair TX650 V2.

The thing is, that if this Corsair is way too overkill, I could change it to a cheaper one (the OCZ ZS 550W is in the price range for example) and then change the mobo to the next in line (Asrock Z77 Pro4). No wiggle room in my budget unfortunately, strict budget in this upgrade. Only parts that can be changed are the mobo and PSU.

Would there be any benefit in ordering the cheaper PSU and more expensive mobo, or am I better off with a substatially better PSU than I maybe need?

A solid 550w should be fine, but with that many HDDs, I'd go with 600+ just to be safe.

That's exactly how I thought. I went with the safer choice, ordered the TX650 V2. :) Now let's hope it's as good as some reviews I've read says.

A TX650 is more than good enough for your needs. It's a Corsair, what more can you say about it.
