Question here.

I have a Maxtor OneTouch external USB Hard drive. Is there a way to get this to an RJ45 network connection so that I can share it over the network?

If you have an old pc and don't mind using that, there is always freenas its fairly easy to setup.

The best place I have found to review NAS devices is Small Net Builder

They have great in depth reviews and I used them to narrow my recently purchased NAS box to the Hammer Myshare 1 TB for $400 bux.

Be very careful if you buy a NAS box as they sometimes have limitations on external drives plugged into the USB ports. Some will on work with certain file systems. Some will reformat the device into a proprietary file system that cannot be moved between systems. There is also significant variations in the network speed of the devices, with some of the cheap ones being so slow that they are almost unusable.

I simply used an old PC running XPPRO for a server for the last several years. I just retired it because I needed a bigger drive, and was tired of having to keep an extra copy of XP up to date.
