I play just two games mostly, World of Tanks and War Thunder, neither are really optimized for SLI..I am running two of these http://www.newegg.com/Product/Product.aspx?Item=N82E16814121660 atm..Would it be a good idea to sell these and go with just a single video card or should I just leave it as is, they work great but I know I am not utilizing them to their full potential..
And what single card would you all recommend?
Not partial to either Nvidia or AMD, either would be fine..And I game at 1920X1080!

What's your budget? A GTX 770 4 GB or R9 280X 3 GB should be sufficient to play those games with mostly highest settings. Will run you about 300 bucks or maybe even cheaper on some BF deals.

Budget $300 to $400
 
If you can stretch to $400 then you should wait till mid december and pick up an R9 290 with aftermarket cooling. If noise doesn't bother you then get R9 290 now.
 
From experience, a 7970ghz/r9 280x plays most games 1080p at 60fps fine. Like Kickasscop said, if you can wait another month or so (which is not confirmed yet), r9 290 @$400 with aftermarket cooling would be ideal and would last a good deal imo.

why would you sell an then spend almost the same amount? I wouldnt even bother and leave what you have.
