Need help migrating from 500GB RAID 1 Array to 292GB RAID 0 array - Migration program

I setup a virtual server on a Dell 1950 with 2 500GB SATA drives running in RAID 1. I'm running ESXi 5.0 on the system and have about 8 VM's installed. I've found that these drives are just too slow for what I'm doing and I have access to 2 146GB 15k SAS 3.0 drives which should work pretty well for this setup. I'm thinking of running either a RAID 0 array or just both drives independently.

My hypervisor will be ESXi ? or a Xen flavor. I know that I will always be running a LAMP server which is going to be a test platform for web hosting and reseller accounts. I will have a version of Win XP and Win 7 running and a few different windows servers running at different times. This is all for educational purposes and will be a home lab setup.

My problem is that I'm not sure how to copy the files from the 500GB drive to the new 292 RAID 0 array. Any help here would be very appreciated. My idea is to install the new drives, create the array, connect the 500GB drive via USB and then run some program like DD_Rescue or some other imaging program. Does this sound logical? What program would be good to make this transfer?

I'm confused. You already have data on the 500GB mirror? If so, what filesystem?
 
What OS are you migrating? Figure out how much you shrink the partition if possible, then use VMware converter to dump the OS image to your ESXi box.

That's the important part. How is the data on the 500GB drives currently? Is it set up with a hypervisor currently (which one?) with the separate OSes in virtual drive files? If not, what is the host OS?
 
I'm sorry, that is confusing without that info. I'm running ESXi 5.0 on the system and have about 8 VM's installed.
