Main problem will be condensation if you go below dew point.

I had two cold plates with peltiers and a system sealed with 5# of desicate once upon a time. I exchanged both the cold and hot side of the peltier with water. IIRC it was the fastest 2 GPU 24/7 system on 3dmark. Kappa
 
I think those are made by that company, LOT. Loads Of Trouble.
