I am looking for a Intel i7 Processor that is best for 3D modeling and data crunching. I have been asked to build a powerhouse computer to handle processing stl files for 3D modeling.

Also looking for a compatible system board to utilize at least 128GB of ram.

Price is not an option.

Thanks in advance

What software and how large are the files? Look at high core count Xeons & NVMe for your workspace.

Which modeling system are you going to be using with it? You need to look into your graphics situation as well.

Agreed. Only the 7820X and 7800X could get to that level of RAM, but only with max density DIMMs. Xeons with the workstation level chipset would be able to handle registered memory, which would be available in much larger module densities. So, yeah, you need a Xeon for this purpose.
