is it possible for me to hook up 2 sets of the LEDS to one controller? how could i do this?

I don't know if those have a specific load rated per channel, but you could always just splice the wires and solder them together, or put them together in the same quick connect connector.

LEDs have such a low current draw that you could probably run 100 or more off one channel of that conroller without any problems.

For that controller, you'd want to run them in parallel. + to + and - to -.
