Layman seeking basic advice

Hi, hopefully someone can help me get started in shopping for a new pc as I'd appreciate some advice. My old pc is giving up the ghost and its about nine years old so to be honest the whole lot will be getting replaced.
I'd like to custom build a setup from pcspecialist.co.uk and I have a budget of £1200 including the monitor and other peripherals. I play RPGs, grand strategy, and just about anything except perhaps not too many shooters.

So, I understand that AMD is likely to be better value than Intel but I'm not sure what I should expect at this sort of budget. Is the AMD 3700X processor still a good option? And if I go for an AMD processor should I be pairing it with an AMD GPU? I'm struggling to know how best to get components that are balanced with each other without one being over or under specced relative to the others.

At this budget could I expect a 1440 display (paired with a cheaper rig?) or is 1080p more realistic (with more money left over for a better rig).

Thanks for any general beginner advice you can offer.
