Intel 1000/MT Server vs Desktop

If they are on the same 32/33 pci bus, would they have the same performance?

I have one machine that can take a 64/66 card, but the other machine (crossover) is 32/33 only. Are two server NIC's worth it?

There's also some features not available on the desktop nic(teaming and a few others). Also Windows XP has limited support for the more advanced features, you'd have to use 2000/2003 to take advantage of them. But in your case 1 64 bit and 1 32bit would be optimal because of the bus's.
