How do I image/clone a ESXI install on a RAID 10 array to RAID 1 array?

I have a RAID 10 array that I want to change to 3 RAID 1 arrays (more spindles) and I have ESXi installed on it. I'd like to image/clone the install (minus the VMFS folder - the VM's) so I don't have to redo the settings. Is there anything special that has to be done and what is the best way to do this? I would usually use something like DD to do this, but IDK how it will work with ESXi and a RAID 10 partition.

Anyone know if there are certain issues I may run into with this?
 
Just so I understand correctly you want to take your VMs off of the RAID 10 and move them to one of the 3 RAID 1's? Are you using NFS or iSCSI?
 
I'm running a standalone ESXi (5.5) host. IDK what FS esxi runs on. The array is setup on the card BIOS (Perc 6i) and is running whatever FS is the default on an ESXi install.

As far as iSCSI, I thought that was something related to network adapters. I have an iSCSI adapter I've never used that looks like a cat5 connection. Can a standard network card run iSCSI when it is on a machine with SCSI capability?
 
it's rather difficult unless the RAID controller can do it built-in. Just reinstall, to be honest - it's a pair of VFAT partitions with the bootbanks.
