Not sure if this is the right forum or not but here goes.

What's the difference between these two in terms of picture quality? Does it change or become more visible at a certain size monitor? What size would that be? What about a multiple monitor setup?

Hdmi is limited to 1920x1080 I believe.
Image quality is the same between the two.

All digital connectors have similar/identical picture quality at supported resolutions.

DVI
HDMI
Displayport & Mini-DP

The differences are in bandwidth & extras:

Dual link DVI has higher bandwidth than most HDMI specs. It can support higher resolutions, including 2560x1600, and can support higher refresh rates, ie, 120hz. There are edge cases involving higher bit colors that require higher-bandwidth connections.

HDMI has a robust audio channel and broad interoperability with non-computer hardware. It also has solid HDCP integration, so you can play copy-protected content, such as bluray & copy-once streamed material.

Displayport has high bandwidth (comparable to DVI), and also has an audio channel, but has limited adoption and has issues with HDCP.

The actual digital video signal, at a supported resolution, will look identical.
