Which one would you guys best recommend in cooling the memory chips on a high-end graphics card?

AS5 should provide better conductivity, but might not stick as well. I seem to remember reading that someone on here used AS5 with tiny dabs of super glue on the corners, but I'd suggest some research/feedback before using glue.

perhaps I could cut the thermal pads into very thin slices, using them as the glue on the edges with the AS5 dab in the middle?

Sounds like it could work if you're willing to do the cutting. The key is to make sure the heatsinks are going to stick. If not, you have to clean both surfaces and do it over.

Ok, I think I can be confident that it will stick, because the cooler that I'm going to be using(An Artic Cooling Accelero X1) has a heatsink plate for the memory chips. I will definately make sure that they stick.

Thanks for your help!
