If a motherboard supports 1600/1333FSB, that means that it supports up to that speed, not just that speed. It'll be fine, and the BIOS will configure it automatically; just make sure the motherboard supports Core 2 CPUs - any on sale now should.
intel is going to release a very expensive quad core processor that is fsb 1600. It is basically just an impressive number, though.
the fsb does not affect the performance of core 2 processors very much. Back in the days of the pentium 4 400/533 fsb days, this was not the case, but the core 2 does not show large performance gains when the fsb is increased.
All of intel's cpus are "quad-pumped" so when we are talking about fsb 1600 what that means is that the 'true' fsb of 400 is multiplied by 4 and you get 1600 "fsb".
Basically motherboards can be set to any fsb within a range if you go into the bios. For instance my old motherboard "supports" up to fsb 1066 but I have it running at fsb 1600, and if I wanted to I could set it to fsb 950 and it would probably work.
A processor with a higher fsb doesn't necessarily mean that it isn't the one you want. For instance the q6600 with a fsb of 1066 is for most people a more powerful chip than the e6750 which has fsb 1333. Again, fsb increases have been shown to have very little effect on Core 2 performance. I would be concerned with the clock speed, the number of cores, and the price.
If overclocking I would also be concerned about the multiplier, the fabrication process (65 vs 45nm if overclocking because 45nm will produce much less heat), and the stepping (for instance you want the g0 stepping on a q6600).
Wow, that was a lot of information. I understood all of it and it's helping me with with my decision of what to purchase I new what 65 vs 45nm was, but I didn't know about the heat. And that answered my 1600 question thank you.
