What exactly is the difference? They are the same cores, but why does one rock for workstation performance, and the other for games? Could I get the workstation card and use it to play games as well?

The difference is in the drivers. Catalyst drivers - the ones for gaming - are designed only for the Radeon series, and will not work with the FireGL series. Likewise, the FireGL drivers are optimized for graphics designers, but perform poorly in gaming, and won't work with the Radeon series. Furthermore, the FireGL drivers don't support Direct3D (DirectX) at all.
