Just a thinking out loud thread here-

Has anyone seen or read about such a setup?

It would seem that it wouldn't be hard to execute and offers some unique benefits.
FIRST, no bezels! The 3 projected images are as big or small (reasonably) as you want. You can just line them up for continuous and smooth visual surround.
With screens that large and totally filling the visual field the gamplay would be quite convincing. It would have much more of an immersion factor than looking at monitors.
Similar to going to see a IMAX film on the HUGE screen that totally fills your field of view.
It adds to the illusion of "being there"

Yes. [H] has done it. The only prohibitive factor is the cost and the space really. How big do you want it to look, what resolution are you after, do you want it to be 3d compatible or not? You'll probably have to dedicate a wall to it, then a place to mount your projectors.

And aspect ratio - the same two advantages of Eyefinity with monitors.

5 projectors in portrait eyefinity is my dream. 5400x1920 would be awesome - high resolution and wider than 16:9. At 2.81:1, it is even wider than most movie's 2.39:1 AR. And when on the desktop, regular Aero Snap gives you two 2700x1920 spaces, which is an AR of 1.4:1 - a little taller than 16:10, perfect for web surfing and office work.

EDIT: And even if you only get the cheap 720p projectors, that is still 3600x1280 ;)
 
It's been done and is definitely a fantastic idea but as others have said there are some serious hurdles to overcome. Creating a theater room for just one projector is difficult enough with mounting and screen setup. Three is going to need a lot of room for both screens and mounting, and if you haven't used a high quality projector before they produce an amazingly large amount of heat. The room would have to be very well cooled to support 3 decent projectors.
 
A DYI solution could be in order here. It would be large, but (relatively) cheap.

If you mount the 3 projectors in line to just give you a very wide picture on a long flat wall (screen) that kind of defeats the idea of the immerse effect. What I was kind of thinking of was semi-circular screen setup; uncommon yes, but the game play would truly surround you then. You would be "in" the game in that sense.
If all is on a flat wall the periphery of your vision will still see the room, negating the effect.
